Triple Berry Layered Smoothie

Strawberries, raspberries and blueberries blended together with Greek yogurt in this thick and delicious Triple Berry Layered Smoothie! A healthy and delicious way to cool off on a warm day!

Ingredients
Blueberry Layer

4 ounces plain non-fat Greek yogurt
3-4 tablespoons milk, start with 3 and if it’s too thick to blend add another tablespoon.
1 cup frozen blueberries
1 tablespoon honey
1/4 teaspoon vanilla extract

Strawberry Raspberry Layer

4 ounces plain non-fat Greek yogurt
3-4 tablespoons milk, start with 3 and if it’s too thick to blend add another tablespoon.
3/4 cup frozen strawberries
1/2 cup frozen raspberries
1 tablespoon honey
1/4 teaspoon vanilla extract

Directions

Blend together all of the ingredients for the blueberry layer until smooth.
Pour evenly into two glasses.
Rinse out the blender then blend together all of the ingredients for the strawberry raspberry layer until smooth.
Pour the strawberry raspberry layer evenly over the blueberry layer.
Serve immediately.

Pumpkin Pie Smoothie

This thick, creamy, healthy pumpkin pie smoothie provides you with the flavors of the delicious fall pie without having to turn on the oven!

Ingredients

1/2 cup milk (skim, 1%, soy, almond, etc.)
1/2 cup plain non-fat Greek yogurt
1/2 cup pumpkin puree
1 frozen banana
2 medjool dates, torn into pieces or chopped
1/2 teaspoon ground cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon nutmeg
1/8 teaspoon ground cloves
1 cup of ice

Directions

Place all of the ingredients in a blender and blend until smooth.

Roasted Strawberry Balsamic Smoothie

Roasted Strawberry Balsamic Smoothie

A simple strawberry smoothie with the flavor turned up thanks to roaster balsamic strawberries!

Ingredients
For the Roasted Strawberries

10 oz fresh strawberries
1 tablespoon pure maple syrup
1 tablespoon balsamic vinegar
Pinch of salt

For the Smoothie

10 oz. roasted strawberries
1 cup non fat milk or milk of choice
1/3 cup plain non fat Greek yogurt
1/2 of a frozen banana
1 tablespoon pure maple syrup
1/2 teaspoon vanilla extract
1 teaspoom balsamic vinegar
1 cup ice

Directions
Roasting the Strawberries

Preheat oven to 350 degrees and line a baking sheet with parchment paper.
Wash and hull the strawberries, then cut them in half and put them in a bowl.
Add the maple syrup, balsamic vinegar, and pinch of salt to the strawberries and toss them together until the strawberries are completely coated.
Pour the strawberries out onto the lined baking sheet and bake them on the middle rack of the oven for 35-40 minutes.
Remove from the oven and let the berries cool to room temperature.
Refrigerate the strawberries until they are cold.

To Make the Smoothie

In a blender add the chilled roasted strawberries, milk, yogurt, banana, maple syrup, vanilla, ice, and balsamic vinegar.
Blend everything until smooth.
Serve immediately/

Ingredients

1 cup unsweetened soymilk or milk of your choice
1 large frozen banana, chopped
1 medjool date, chopped
1 tablespoon almond butter
1/4 teaspoon cinnamon
1/4 teaspoon vanilla

Salted Dark Chocolate Peanut Butter Fudge

SALTED DARK CHOCOLATE PEANUT BUTTER FUDGE

Salted Dark Chocolate Peanut Butter Fudge is layers of peanut butter and dark chocolate fudge with salted chopped peanuts added to the mix. It’s an easy, 5 ingredient treat that’s perfect for chocolate and peanut butter lovers!

Ingredients

1½ cups dark chocolate chips, divided
Place a saute pan with about 2 inches of water over medium heat and bring to a simmer. Place 1 cup of the chocolate chips into a heat proof bowl with 1 tablespoon of coconut oil and ½ of the can of sweetened condensed milk. Place into the pan of simmering water and reduce heat to low (this is your double boiler). Stir the chocolate mixture with a rubber scraper until smooth, then add ¼ cup of the chopped peanuts and stir until combined. Pour the chocolate mixture into the prepared pan and spread evenly.
14 ounce can sweetened condensed milk, divided
1 cup peanut butter
½ cup chopped salted peanuts, divided

Directions

Line an 8×8″ square baking pan with foil and spray lightly with cooking spray. Set aside.
Beat eggs together with the milk. Add to a medium skillet and scramble until no longer runny. Place into a medium sized mixing bowl. Add the cooked and crumbled bacon to the eggs.
Place the peanut butter and remaining coconut oil in a microwaveable bowl and microwave for 30 seconds or until melted. Stir to combine, then stir in the remaining sweetened condensed milk. Pour over the chocolate layer and spread evenly.
Press the remaining ½ cup chocolate chips and ¼ cup of chopped peanuts into the top, and chill for a minimum of 2 hours or until set.
